Chicken is such a versatile ingredient. It is suitable for so much more than just frying. So I have started an exploration of different, delicious ways to prepare chicken.

Recently, I made a fantastic Chicken Piccata. It was easy to make, and I was pleased with the results. I found a keto-friendly recipe at PeaceLoveAndLowCarb.com.

Crispy Chicken Thigh Piccata

8 bone-in, skin-on chicken thighs

2 teaspoons sea salt

1 teaspoon dried Italian seasoning

1 teaspoon garlic powder

½ teaspoon ground black pepper

2 tablespoons olive oil

3 tablespoons butter

2 tablespoons lemon juice

3 tablespoons capers

1 lemon, sliced into wheels

Chopped fresh parsley for garnish

I started by heating the oven to 400 degrees while I assembled the ingredients. Unfortunately, the store did not have bone-in chicken, so I used boneless thighs instead. I seasoned both sides of the chicken with salt, pepper, garlic powder, and Italian seasoning.

I heated the olive oil in a large oven-safe skillet over medium-high heat. I put the thighs in the pan presentation side down and cooked it until the skin was crispy and golden brown, about five minutes.

I turned the thighs over and put the skillet in the oven. The recipe said to leave it in the oven for 15 to 20 minutes, but since boneless chicken cooks faster, I started checking it after 10 minutes. Once the thighs were at the correct temperature (I pulled them out at 160 degrees to account for carryover cooking), I pulled the pan out of the oven.

I transferred the thighs to a plate and covered them to keep them warm.  Next, I added the butter, lemon juice, lemon slices, and capers to the pan. Then, using a rubber spatula, I scraped up the brown bits stuck to the bottom of the pan and mixed everything together.

I plated the chicken and poured the sauce on top. I sprinkled fresh parsley on top before serving. The zing the lemon gave the dish was terrific. The sauce was so good that I saved what was left to put on pasta later.

Each serving has 502 calories, 43 grams of protein, 35 grams of fat, 2 grams of carbs, and 1 gram of fiber.
