Alfredo sauce is hands down my favorite pasta sauce. I had always bought jarred, thinking the magical concoction must require a particular skill to master.  

Then I met Chris, and he made alfredo sauce like it was nothing. After years of eating his sauce, I decided to attempt it myself. I looked around on the internet to see if there was one basic recipe when I happened on an unusual twist using cream cheese. (TheRecipeCritic.com) I was intrigued.

The Best Homemade Alfredo Sauce Ever!

1/2 cup butter

2 cups heavy whipping cream

4 ounces cream cheese

1/2 teaspoon minced garlic

1 teaspoon garlic powder

1 teaspoon Italian seasoning

1/4 teaspoon salt

1/4 teaspoon pepper

1 cup grated parmesan cheese 

For the best result, stay away from the bags of grated cheese.

I cooked the butter, cream, and cream cheese in a saucepan over medium heat, whisking until the butter and cheese melted.

I added the minced garlic, garlic powder (I used homemade), Italian seasoning, salt, and pepper, and continued whisking until the mixture was smooth. I added the parmesan and stirred until it melted.

I brought the sauce to a simmer and cooked it for about five minutes until it started to thicken. Helpful hint: If the sauce gets too hot and breaks, add one or two tablespoons of cream and stir vigorously to tighten it back up.

Penne pasta Alfredo Sauce

I cooked penne pasta in homemade chicken stock using the cold water method. Cover the pasta with water (or chicken stock) by 1/3 inch. Add one tablespoon of salt for every quart of liquid and bring it to a boil over medium-high. Once it boils, take the lid off and simmer it until it is al dente, five to ten minutes.

Pulled Turkey Alfredo Sauce

I mixed the pasta, leftover turkey, and green peas with the sauce and topped it with freshly grated parmesan. The sauce lived up to its name.  

The sauce has 329 calories per serving, 33 grams of fat, 3 grams of carbs with 1 gram of fiber, and 6 grams of protein.
