Exploring the simple pleasures in life.
After many years of effort, I have found that the key to true happiness comes with learning to enjoy the simple pleasures in life. It’s in the awesome feeling that you have when the garden is full of beautiful banana peppers. It comes from spending time with the people you love and sharing fantastic adventures with them. This Uncomplicated Life is my way of sharing my journey into finding and enjoying the simple pleasures.
Lemon-Brined Fried Chicken
I can remember making fried chicken as a girl. The recipe was very basic. I shook the chicken in a baggie with flour and then fried it in an electric skillet. It was always kind of bland, very often either undercooked or had burned spots and never looked anything like KFC.
“Always Eat After 7 PM”
Most of my adult life, I have struggled with weight. I have lost weight in a variety of ways. Some weight I have kept off permanently (at least so far) and some weight I fluctuate back and forth, losing and gaining.
Macaroni and Cheese
I learned this recipe as a child. Over the years I have attempted to make it better, but according to my kids, it didn't need it.
Salisbury Steak
As a kid, anytime I would pick a tv-dinner I would always pick Salisbury steak. I love the wonderful mushroom gravy. I found a recipe I liked a few years ago and, as it turns out, the homemade is so much better than the tv-dinner version.
Creamy Caramelized Onion Soup
I have always enjoyed French Onion soup, but not necessarily the actual onion part. I found a recipe for a rich, creamy caramelized onion soup that was absolutely fantastic.
Steak Stroganoff
I was in the mood for beef stroganoff, but with a twist.
Lighter Chicken Enchiladas
With it being Cinco de Mayo, I decided Mexican food would be right for dinner. Enchiladas was a great way to use leftover turkey and this recipe has a lighter version.
Turkey Curry
Chris roasted a turkey this week. What to do with the leftovers? This Turkey Curry was delicious and easy to make.
Soy Ginger Salmon
I found a quick, easy and delicious recipe for salmon.
Salmon for Brunch
I intended to cook salmon for dinner last night. I had a recipe picked out but somehow it just didn't happen. I decided to make brunch instead.
Cornish Hen with Mediterranean Garlic Spice Rub
After two weeks of amazing food from Chris, I decided it was my turn to cook for him. I wanted to make something kind of fancy so I decided to make Cornish Hen.
A Whole New World
The last month has been very strange. The strangeness started with our trip to Colorado and continued upon our return home.
Widefield Disc Golf Course
I attempted to throw between the trees to drop my disc into the basket. As usual for me, my throw was a little off. Disappointed by the throw, I became elated as I watched the disc hit the tree and then bounce into the basket.
Colorado and Coronavirus Part Two
Suddenly the cars in front of us slowed down to a crawl. I could not figure out why there would be so much traffic in the park.
