For our last meal in Colorado, we chose Paravicini’s Italian Bistro, another restaurant we discovered on Diners, Drive-Ins and Dives. We called our order in and took advantage of their curbside pickup. We paid with a credit card over the phone, so the pickup process was seamless. I called when we arrived and they brought our lunch immediately with minimal contact. It was a great way to do business in the wake of the Coronavirus pandemic.
In addition to the food we had ordered, they also included an order of burrata with tomatoes and delicious bread with balsamic and olive oil. I ordered Tortellini Carbonara, cheese-filled tortellini in alfredo sauce with peas and prosciutto, with Ceasar Salad. The salad was very simple, romaine, croutons and parmesan with a tasty dressing, one of the best I have had. The pasta was perfectly al dente with a rich, creamy sauce. The peas were nicely cooked and the prosciutto added a lovely saltiness to the dish.
Chris ordered Veal Milanese, a veal cutlet topped with cheese, tomatoes, capers, garlic, onions and black olives in a lemon butter wine sauce over capellini with a cup of Pasta Fagiole. The sauce was bright and flavorful and complemented the perfectly cooked veal nicely. He enjoyed the flavorful soup as well.
As this would be our last good meal on this vacation and I had not eaten any dessert the entire trip, dessert was a must. I had a hard time choosing between several of the desserts on the menu. I really wanted to order six of them but finally settled on Bada Bing Cheesecake. The cheesecake was rich and creamy with a beautiful cherry flavor. The white and dark chocolate added a wonderful dimension of flavor and the luscious black cherry sauce drizzled over the top with large, plump cherries was the perfect finish.
Much to my surprise, Chris also ordered dessert, which allowed me the chance to also taste Tiramisu. The lovely combination of ladyfingers, mascarpone, espresso and chocolate was the lightest I have ever had. Chris noticed a coconut flavor, which worked very nicely, as well. The dessert was spectacular, the only disappointment being that Chris only let me have two bites.
