I had not been feeling well the night before, so Chris decided that we should have pho for lunch.  We found Pho & Grill not too far from our cottage in Colorado Springs.  Of course, with the Covid-19 crisis, we ordered carry out.

I ordered rare beef and meatball, while Chris ordered the Special Combo with beef, tendon, tripe, flank and meatballs.  We also ordered two orders of spring rolls with shrimp, lettuce, bean sprouts and vermicelli noodles.

I was pleasantly surprised to see that they had packaged the broth separately from the rest of the ingredients, giving us the opportunity to reheat the broth and noodles without overcooking the meat or wilting the fresh basil and crunchy bean sprouts.  The pho was rich and delicious.  The two sauces, included on the side, allowed the soup to have a lovely spice level as well.  We ordered the large portion, which was enough food for two meals.   

The spring rolls were light and flavorful with a tasty peanut sauce.  They did not keep as well as the soup did.  On day two the rice wrapper had hardened a little making it not as pleasant as it had been when fresh.  Providing us with chopsticks was a nice touch.
