On our second night back in Colorado Springs, we decided it would be nice to treat ourselves to pizza for dinner after a day spent running errands.  We weren’t looking to order the everyday Domino’s but instead went to Pizzeria Rustica in Old Colorado City.  With Covid numbers on the rise in Colorado, we opted to order our pizza and take it back to our cottage to enjoy.

While all the pizzas on the menu looked amazing, we settled on Rustica, their signature pizza, which had been recommended to us.  We asked about the pizza’s size to learn that it is 10-12 inches, designed to be eaten by one or two people.  Chris decided we might need something else as well, having not eaten for most of the day, so we also ordered Polpette Al Forno.

We waited in the lobby and were surprised at how quickly our food was ready.

When we returned to the cottage, we started with the Polpette Al Forno, house-made meatballs topped with San Marzano tomato sauce, fresh oregano, and pecorino romano.  There were four meatballs in the portion, perfect for an appetizer.  The meatballs had a great consistency and were tasty, but the fresh, delicious sauce definitely stole the show.

I loved the Rustica.  The thin crust pizza was topped with crushed San Marzano tomatoes, house-made for di latte mozzarella, prosciutto di parma, and fresh baby arugula.  It was a wonderful flavor combination.  The delicious pizza had a wonderful fresh flavor without the heaviness often associated with pizza.  I was pleasantly surprised when I bit into the garlic ricotta pocket in the crust.

Our dinner was delicious and the perfect amount of food to satisfy the two of us.  We will definitely return to Pizzeria Rustica again to sample more of their exciting menu options.
