While we were planning our trip to Colorado Springs, we watched all the Diners, Drive-Ins and Dives episodes featuring restaurants in Colorado Springs.  Mountain Shadows Restaurant looked like a good spot for breakfast.  Their claim to fame is a Giant Cinnamon Roll.  The cinnamon roll is very popular and is only available in limited quantities.  I noticed in some of the reviews people complained that the cinnamon rolls sell out really fast.  As we planned to go for breakfast our first morning in Colorado, after two 12+ hour driving days, I had no expectations that I would be able to get one of the cinnamon rolls.

As a result of the Coronavirus pandemic, Colorado Springs closed all restaurants to dining in on the night we arrived.  I called Mountain Shadows and was happy to discover that they were open for takeout.  When I asked about the cinnamon roll, the owner made a light-hearted joke about how swamped they were.  I was actually the first customer of the day and was happy to see that the limited staff in the restaurant had a friendly, positive attitude in an obviously stressful situation.

After picking up our food we returned to our cottage to enjoy our breakfast.  Chris ordered eggs with hash browns and bacon.  Unfortunately, the perfectly cooked eggs did not fare well on the trip, cooling down enough to no longer be the enjoyable dish we would have had if we had been able to eat at the restaurant.  I ordered a Green Chili and Cheddar Omelet.  The omelet was one of the best I have ever had.  The mild chilis had a lovely flavor and were perfectly balanced with just the right amount of cheese.  As I unpacked the box I realized that I had neglected to ask for sour cream but as I ate the omelet I realized that it did not need it.  The hash browns were tasty with a perfect outside crust playing nicely against the soft interior.

When they said giant cinnamon roll, I had no idea just how big it was.  The cinnamon roll was gargantuan, almost half the size of my head!  They included three containers of a decadent maple glaze to pour over the top.  The dough was soft and buttery with a generous amount of delicious cinnamon swirled throughout.  I ate a slice of the cinnamon roll while it was fresh and warm.  The next morning I reheated a slice of the roll in the microwave and added some of the glaze.  In this way, I made the cinnamon roll last for the four days we were in Colorado Springs.
