While in Colorado Springs, we decided to get burgers for dinner at Skirted Heifer, another Diners, Drive-Ins and Dives discovery.  With the ban on dining in, we ordered online in front of the restaurant.  We opted to walk in and pick our food up, but they were also offering curbside pickup for those who were more comfortable with that.

We were happy that, although there was a ban on dining in, they stayed open for takeout.  The staff was friendly and had a  positive attitude.  The restaurant is proud of the fact that they use 100% grass-fed beef, all locally and humanely raised in Colorado.  According to the menu, skirted is “1. a burger with a huge layer of cheddar cheese resembling a skirt 2. deliciousness”.  The grilled cheese looks like an actual skirt on the burger.  They also offer a naked version of the burger for those who are not into cheese but you can add cheese to the naked burger if you still want cheese but not the skirt.

We both ordered The Classic Skirted Heifer, with cheddar, lettuce, tomato, pickle, onion and Heifer Sauce on a Garlic Focaccia Bun.  Chris added grilled mushrooms to his and I added steak sauce and Wisconsin cheddar.  We also ordered Belgian Fries.  While messy, the burgers were fantastic.  I loved the soft, buttery Focaccia buns with a perfect bun to burger ratio.  I was not sure exactly how to eat the creation so started by eating the cheddar skirt.  The grilled cheese was crispy and spectacular.

The fries were delicious as well, especially when dipped in curry ketchup.  Skirted Heifer will definitely be a place that we frequent when we move to Colorado in the fall.
